El Vista, a Latin-inspired bar and lounge headed by celebrated chef Giovanni Pilu is about to open as we speak, marking the second collaboration between Accor’s in-house meals and beverage group, Desk For, and hospitality innovators The Possibly Group.
Positioned on the Pullman Quay Grand Sydney Harbour, El Vista takes over from the lodge’s earlier bar and lounge, Hacienda.

“We’re thrilled to unveil El Vista in partnership with The Possibly Group and Giovanni Pilu. This collaboration captures precisely what Desk For was created to do: unite visionary hospitality expertise to create fantastically executed, culturally related, guest-led experiences,” Head of Desk For Ben Creek stated.

The opening is the second of three retailers launched – together with Flaminia, a harbourside Italian restaurant from Giovanni Pilu and Marilyn Annecchini (Pilu at Freshwater) opening early December, and Bar Allora, the Nineteen Eighties Italian-inspired all-day bar and restaurant now open in Sydney’s Bond Avenue.

“With El Vista, we didn’t wish to recreate the previous – we needed to recapture its spirit. Acapulco within the Nineteen Sixties was electrical: easy glamour, late nights, huge power and a tradition constructed on rhythm and connection. El Vista distills that feeling and brings it to Sydney’s harbour, with meals, music and cocktails that really feel alive with story and soul”, Co-Founder and Director of The Possibly Group Stefano Catino stated.
Within the kitchen, Chef Giovanni Pilu will serve small and enormous plates that nod to coastal Mexico and South America.
